Santo André Cheese Factory was created as a result of the transformation that its owner, Carlos Reija, carried out on his livestock farm in 2010. Taking advantage of the fact that its geographical location is within the “Cebreiro Designation of Origin”, he made an investment to convert the cutting of the calves into a dairy, until, finally, in 2015, he completely abandoned dairy production to focus on the production of cheeses.
